Clad in matching old-timey striped aprons, Everett Beck and Brandon Alegria passed a duck confit amuse bouche through the tiny window of their new food truck, The Shack.
The truck, parked in front of Chalice Tattoo Studio off Latah Street, is a miniscule nine feet long, five feet wide and seven feet high. But the pair is putting its two gas burners and 15-inch flat top grill to use, pumping out eclectic grub: poutine with pepper gravy, risotto tots with a tomato ragu and a quinoa and couscous salad with string beans.
"We plan to continuously change the menu so we have a variety of things going on--to keep it fresh," said Alegria.
Alegria and Beck met while attending Mountain View High School, but they've spent the past three years on opposite sides of the country working for the Patina Group--Alegria at the Michelin-starred Patina in Los Angeles and Beck at Brasserie in New York City.
"We had the opportunity to come out and start a food truck so we kind of quit our jobs and our lives out there to start this," said Beck.
Though they eventually hope to park the tiny truck on the main downtown drag, Beck and Alegria are currently set up for lunch weekdays at Chalice and evenings at Oakley Moody Thursday through Saturday.
"We really just want to give some new food back to Boise because we go downtown and all we have to eat is hotdogs," said Alegria.
