In early 2016, someone set fire to the International Market in Boise. The market housed many restaurants started by refugees, and after the fire, their owners were again displaced. One of them, Kibrom Milash, reopened Kibrom's Restaurant on State Street, and has garnered a huge following for his Ethiopian/Eritrean cuisine, much of which is vegan. As Boise's vegetarian and vegan communities have grown—along with a larger-scale yearning for alternatives to Boise's glut of burgers and fries—so has the reputation of Kibrom's. One voter wrote, "The vegan options are delicious, and it's very vegan- and vegetarian-friendly."
