Ripsnort, a newly minted food truck serving up burritos across Boise and beyond, happened upon it’s unique name by chance.
“I was looking at the Merriam-Webster word of the day, and it was ‘ripsnorter,’” said Ripsnort co-owner Shiela Kelso, who started the food truck with her husband Shane. “I just thought that sounded so cool, and it meant literally ‘something extraordinary.’ It’s a word from the 1900s, when people would say ‘having a rip-snortin’ good time.’”
The Kelsos, who ditched their day jobs when friends and family started requesting their tortilla-wrapped creations, aim to live up to their business name by whipping up extraordinary burritos. The Ripsnort menu offers stuffing options like butternut squash, parmesan rice and scrambled eggs alongside classic cheese and meat fillings, and any burrito can be turned into a taco, spinach or rice bowl to accommodate dietary restrictions.
Burritos aren't all Ripsnort serves, either—the food truck also boast a daily menu of salad, soup and sandwich specials for those who aren't in a mariachi mood. The Kelsos even make a signature Ripsnort Hot Sauce, a sweet and spicy concoction of pineapple and habanero peppers that has become so popular it will soon be available by the bottle.
