Last week I took a two-day class on food safety called Serving It Safe
. The instructor, Laura Thomas, MEd, RD, kept our class of 25 food service professionals on our feet as we created and explained posters that depicted bacterial and viral sources of common food-borne illnesses. We also reviewed proper methods for maintaining a clean work environment and best practices for commercial food handling from purchasing and receiving products to proper storage, cooking, serving and reheating.
According to the current Idaho Food Code, the Health Department requires this class for the "person in charge" who must be present at any food service site during all hours of operation, but would be valuable for anyone who prepares food for a living.
The next class will be held on Tuesday, April 13 and Wednesday, April 14 from 3-8 p.m. at the Boise Holiday Inn on Vista Avenue. For more info visit the Idaho Department of Education’s Web site.
