How to Roast Basque Peppers, BW Style


After a recent interview with Basque pepper-grower Lino Zabala, I headed back to BW HQ lugging a grocery bag full of Basque choriceros. Ever the industrious office kitchen chef, our office manager Shea decided to get a few roasting in our teeny toaster oven.

Though the peppers didn't have the oily sheen of their brothers at Leku Ona, these roasted lovelies, spritzed with balsamic vinegar and dusted with salt, sent waves of sweet smells all around the office.
