Cameron Lumsden is no stranger to Italian cuisine. The restaurateur helped
start expand the wildly successful Flatbread Community Oven Neapolitan pizza chain with his brother Rob before opening the locally focused Northwest eatery Fork in early 2011. And now, Lumsden has his eyes set on another concept.
“We are taking over the Palmercash space. It’s about 2,200 square feet,” Lumsden explained. “It’ll be a 70-seat restaurant; full-bar, full service. And keeping in line with our company philosophy of obviously supporting local, it’s going to be a locally inspired Italian concept.”
The kitchen will be open for lunch and dinner, while bartenders sling craft cocktails behind the U-shaped bar.
“There’s a few [Italian restaurants] that are in town, but we think that from a design standpoint, it’ll be a lot more hip and fun,” Lumsden said. “I think Fork is a very comfortable place, by design, with dark colors and rusts and browns and greens … where this restaurant is only 70 seats so it’ll be a lot more fun and interesting and modern design.”
Fork's Executive Chef Wiley Earl will oversee the still-unnamed restaurant from a culinary standpoint, offering house-made pastas and seasonal, local produce, when available.
“The fine dining touches will be there similar to Fork, but we like the approachable price point; we don’t want to get into the fine-dining business,” Lumsden said. “We want to treat people there well, but not have to charge them for it.”
Lumsden plans to have the new concept up and running by late November or early December.
